Ingredients

  • 2 cups marinara sauce
  • 9 lasagna noodles
  • 2 cups zucchini, sliced
  • 2 cups bell peppers, chopped (red, yellow, or green)
  • 1 cup mushrooms, sliced
  • 1 cup spinach, fresh
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 15 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg

Instructions

  1. Preheat the oven to 375°F.
  2. In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, add a splash of olive oil and sauté the zucchini, bell peppers, and mushrooms for about 5-7 minutes until softened.
  4. Stir in the spinach, oregano, basil, garlic powder, salt, and pepper, and cook for an additional 2 minutes. Remove from heat.
  5. In a mixing bowl, combine the ricotta cheese, egg, and half of the Parmesan cheese. Mix until smooth.
  6. Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish.
  7. Place 3 lasagna noodles over the sauce.
  8. Spread half of the ricotta mixture over the noodles, followed by half of the sautéed vegetables, and a layer of marinara sauce.
  9. Repeat the layers, finishing with the last 3 noodles topped with remaining marinara sauce, mozzarella cheese, and the rest of the Parmesan cheese.
  10. Cover the baking dish with aluminum foil and bake for 25 minutes.
  11. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  12. Let the lasagna cool for 10 minutes before slicing.

Notes

  • For a creamier texture, add an extra layer of ricotta in the middle.
  • You can substitute the vegetables with your favorites, such as eggplant or broccoli, for a different flavor profile.
