A delicious and flavorful Layered Mediterranean Vegetable Lasagna with Creamy Ricotta, perfect for a hearty meal.

- 2 cups marinara sauce
- 9 lasagna noodles
- 2 cups zucchini, sliced
- 2 cups bell peppers, chopped (red, yellow, or green)
- 1 cup mushrooms, sliced
- 1 cup spinach, fresh
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 15 ounces ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
Instructions
- Preheat the oven to 375°F.
- In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add a splash of olive oil and sauté the zucchini, bell peppers, and mushrooms for about 5-7 minutes until softened.
- Stir in the spinach, oregano, basil, garlic powder, salt, and pepper, and cook for an additional 2 minutes. Remove from heat.
- In a mixing bowl, combine the ricotta cheese, egg, and half of the Parmesan cheese. Mix until smooth.
- Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish.
- Place 3 lasagna noodles over the sauce.
- Spread half of the ricotta mixture over the noodles, followed by half of the sautéed vegetables, and a layer of marinara sauce.
- Repeat the layers, finishing with the last 3 noodles topped with remaining marinara sauce, mozzarella cheese, and the rest of the Parmesan cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let the lasagna cool for 10 minutes before slicing.
Notes
- For a creamier texture, add an extra layer of ricotta in the middle.
- You can substitute the vegetables with your favorites, such as eggplant or broccoli, for a different flavor profile.
