Description

A cozy and flavorful Lasagna Soup recipe that combines all the classic flavors of lasagna in a comforting soup form.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef or Italian sausage
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 8 ounces uncooked lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add the ground beef or Italian sausage to the pot. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the crushed tomatoes, broth, dried basil, oregano, red pepper flakes (if using), and season with salt and pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to a simmer and add the broken lasagna noodles. Cook for about 10-12 minutes, or until the noodles are tender.
  5. In a separate bowl, mix together the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese.
  6. To serve, ladle the soup into bowls and top each serving with a generous dollop of the ricotta mixture. Sprinkle the remaining mozzarella and Parmesan cheese on top. Garnish with fresh basil or parsley if desired.

Notes

  • For a vegetarian version, substitute the meat with mushrooms or lentils and use vegetable broth.
  • Add chopped spinach or kale to the soup during the last few minutes of cooking for added nutrition and flavor.
