  • 2 pounds lamb shoulder, cut into large chunks
  • 4 ounces bone marrow (about 23 bones)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup red wine
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 2 teaspoons fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Add the lamb shoulder pieces and sear them on all sides until browned, about 5-7 minutes. Remove the lamb and set aside.
  3. In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute.
  4. Pour in the red wine, scraping the bottom of the pot to deglaze it. Let it simmer for about 3-4 minutes until slightly reduced.
  5. Return the lamb to the pot and add the beef broth, thyme, salt, pepper, and bay leaf. Stir to combine.
  6. Nestle the bone marrow into the pot among the lamb pieces.
  7. Bring the mixture to a gentle simmer, then cover the pot with a lid and transfer it to the preheated oven.
  8. Braise for 2.5 to 3 hours, or until the lamb is tender and easily pulls apart with a fork.
  9. Remove the pot from the oven and let it rest for 10 minutes before serving.

Notes

  • For a richer flavor, consider adding a tablespoon of tomato paste to the braising liquid.
  • If you prefer a thicker sauce, remove the lamb once cooked, and simmer the liquid on the stovetop until it reduces to your desired consistency.
