Ingredients

  • 2 tablespoons unsalted butter, plus more for serving
  • 1 pound lamb liver, cleaned and trimmed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup heavy cream
  • 2 tablespoons brandy or cognac (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add the minced garlic and thyme, cooking for an additional 1-2 minutes until fragrant.
  2. Increase the heat to medium-high and add the lamb liver to the skillet. Season with salt, pepper, and nutmeg. Cook for about 3-4 minutes on each side, until the liver is browned but still slightly pink in the center. Remove from heat and let cool slightly.
  3. Transfer the liver mixture to a food processor. Add the heavy cream and brandy (if using). Process until smooth and creamy, scraping down the sides as needed.
  4. Taste and adjust seasoning if necessary. Spoon the mousse into a serving dish or individual ramekins.
  5. Melt additional butter and drizzle it over the top of the mousse for a rich finish. Cover and refrigerate for at least 2 hours to allow the flavors to meld and the mousse to set.
  6. Before serving, garnish with chopped parsley. Serve with toasted bread or crackers.

  • For a smoother texture, strain the mousse through a fine-mesh sieve after processing.
