- 2 pounds lamb shoulder, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon garam masala
- 1 teaspoon chili powder (adjust to taste)
- 1 can (14 ounces) coconut milk
- 1 cup beef or chicken broth
- 1 cup plain yogurt
- 1/4 cup slivered almonds
- 1/4 cup raisins
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the lamb cubes to the pot, browning them on all sides for about 5-6 minutes.
- Sprinkle in the cumin, coriander, turmeric, garam masala, and chili powder, stirring well to coat the lamb evenly with the spices.
- Pour in the coconut milk and broth, bringing the mixture to a gentle simmer.
- Cover the pot and let the stew cook on low heat for about 1.5 to 2 hours, or until the lamb is tender. Stir occasionally to prevent sticking.
- Once the lamb is tender, stir in the yogurt, slivered almonds, and raisins. Season with salt and pepper to taste.
- Allow the stew to simmer for an additional 10 minutes to heat through.
- Serve hot, garnished with fresh cilantro over rice or with naan bread.
Notes
- For a spicier kick, add diced green chilies along with the onions.
- To make it a vegetarian dish, substitute lamb with chickpeas or mixed vegetables and adjust cooking times accordingly.
