  • 2 pounds lamb shoulder, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder (adjust to taste)
  • 1 can (14 ounces) coconut milk
  • 1 cup beef or chicken broth
  • 1 cup plain yogurt
  • 1/4 cup slivered almonds
  • 1/4 cup raisins
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the lamb cubes to the pot, browning them on all sides for about 5-6 minutes.
  4. Sprinkle in the cumin, coriander, turmeric, garam masala, and chili powder, stirring well to coat the lamb evenly with the spices.
  5. Pour in the coconut milk and broth, bringing the mixture to a gentle simmer.
  6. Cover the pot and let the stew cook on low heat for about 1.5 to 2 hours, or until the lamb is tender. Stir occasionally to prevent sticking.
  7. Once the lamb is tender, stir in the yogurt, slivered almonds, and raisins. Season with salt and pepper to taste.
  8. Allow the stew to simmer for an additional 10 minutes to heat through.
  9. Serve hot, garnished with fresh cilantro over rice or with naan bread.

Notes

  • For a spicier kick, add diced green chilies along with the onions.
  • To make it a vegetarian dish, substitute lamb with chickpeas or mixed vegetables and adjust cooking times accordingly.
