Description

Lablabi Asida Cups are a delicious and nutritious dish made with spiced chickpeas and a creamy tahini sauce, served over a base of asida.


Ingredients

  • 1 cup chickpeas, dried
  • 4 cups water (for soaking and cooking)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt to taste
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 1/4 cup fresh parsley, chopped
  • 4 cups asida (prepared from 1 cup flour and 4 cups water)
  • 1/2 cup diced cucumber (for garnish)
  • 1/2 cup diced tomatoes (for garnish)
  • 1/4 cup sliced olives (for garnish)

Instructions

  1. Begin by soaking the chickpeas in water overnight. Drain and rinse them the next day. In a pot, add the soaked chickpeas and 4 cups of fresh water. Bring to a boil, then reduce heat and simmer for about 1 to 1.5 hours, or until tender. Drain and set aside.
  2. In a skillet, heat the olive oil over medium heat. Add the cooked chickpeas, cumin, paprika, cayenne pepper, and salt. Stir to combine and cook for about 5 minutes until heated through and fragrant.
  3. In a bowl, mix the tahini and lemon juice until smooth. If the mixture is too thick, add a little water to reach your desired consistency.
  4. To prepare the asida, bring 4 cups of water to a boil in a separate pot. Gradually whisk in 1 cup of flour, stirring continuously to avoid lumps. Cook for about 10 minutes until thickened, stirring constantly. Remove from heat.
  5. To assemble, place a layer of asida in the bottom of each cup. Top with a generous portion of the spiced chickpeas. Drizzle with tahini sauce and garnish with chopped parsley, diced cucumber, diced tomatoes, and sliced olives.
  6. Serve immediately while warm, or chill in the refrigerator for 30 minutes for a refreshing cold version.

Notes

  • For a vegetarian protein boost, add crumbled feta cheese on top before serving.
  • Experiment with different spices such as coriander or turmeric for added flavor in the chickpeas.
