Description
Lablabi Asida Cups are a delicious and nutritious dish made with spiced chickpeas and a creamy tahini sauce, served over a base of asida.
Ingredients

- 1 cup chickpeas, dried
- 4 cups water (for soaking and cooking)
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt to taste
- 1/4 cup tahini
- 1/4 cup lemon juice
- 1/4 cup fresh parsley, chopped
- 4 cups asida (prepared from 1 cup flour and 4 cups water)
- 1/2 cup diced cucumber (for garnish)
- 1/2 cup diced tomatoes (for garnish)
- 1/4 cup sliced olives (for garnish)
Instructions
- Begin by soaking the chickpeas in water overnight. Drain and rinse them the next day. In a pot, add the soaked chickpeas and 4 cups of fresh water. Bring to a boil, then reduce heat and simmer for about 1 to 1.5 hours, or until tender. Drain and set aside.
- In a skillet, heat the olive oil over medium heat. Add the cooked chickpeas, cumin, paprika, cayenne pepper, and salt. Stir to combine and cook for about 5 minutes until heated through and fragrant.
- In a bowl, mix the tahini and lemon juice until smooth. If the mixture is too thick, add a little water to reach your desired consistency.
- To prepare the asida, bring 4 cups of water to a boil in a separate pot. Gradually whisk in 1 cup of flour, stirring continuously to avoid lumps. Cook for about 10 minutes until thickened, stirring constantly. Remove from heat.
- To assemble, place a layer of asida in the bottom of each cup. Top with a generous portion of the spiced chickpeas. Drizzle with tahini sauce and garnish with chopped parsley, diced cucumber, diced tomatoes, and sliced olives.
- Serve immediately while warm, or chill in the refrigerator for 30 minutes for a refreshing cold version.
Notes
- For a vegetarian protein boost, add crumbled feta cheese on top before serving.
- Experiment with different spices such as coriander or turmeric for added flavor in the chickpeas.
