Ingredients

  • 2 cups glutinous rice flour
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 1/2 teaspoon sea salt
  • 1/2 cup finely chopped cooked chestnuts
  • 1/2 cup pitted and chopped jujubes
  • 1 tablespoon sesame seeds (optional, for garnish)
  • 1 tablespoon cornstarch (for dusting)

Instructions

  1. In a mixing bowl, blend the glutinous rice flour, sugar, and sea salt.
  2. Slowly pour in the water while stirring until the mixture transforms into a pliable dough. If the dough feels overly sticky, incorporate a bit more flour until it reaches the right consistency.
  3. Shape the dough into small spheres, roughly the size of a golf ball.
  4. Gently press each ball flat in your hand, then place a teaspoon of the chestnut and jujube mixture in the center.
  5. Carefully fold the edges of the dough over the filling and roll it back into a perfect sphere, ensuring the filling is sealed inside.
  6. Fill a large pot with water and bring it to a rolling boil.
  7. Drop the prepared rice balls into the boiling water in small batches, ensuring they have enough space to move freely.
  8. Allow them to cook for about 5-7 minutes, or until they rise to the surface, indicating they are done.
  9. Using a slotted spoon, lift the rice balls from the water and place them on a plate that has been lightly dusted with cornstarch to avoid sticking.
  10. For an extra touch, sprinkle sesame seeds over the rice balls before serving. These delightful treats can be enjoyed warm or at room temperature.
