Delicious Korean BBQ Pork Belly Sliders topped with spicy kimchi mayo.

- 1 pound pork belly, cut into 1-inch cubes
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon minced garlic
- 1 teaspoon grated ginger
- 1/2 teaspoon black pepper
- 1 tablespoon vegetable oil
- 12 slider buns
- 1 cup kimchi, chopped
- 1/2 cup mayonnaise
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha (optional)
- Green onions, sliced (for garnish)
Instructions
- In a bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, and black pepper. Add the pork belly cubes and marinate for at least 1 hour, or overnight for best flavor.
- Preheat your grill or a skillet over medium-high heat. Add vegetable oil to the skillet if using.
- Remove the pork belly from the marinade and cook on the grill or skillet for about 3-4 minutes on each side, or until crispy and caramelized.
- While the pork is cooking, prepare the kimchi mayo by mixing chopped kimchi, mayonnaise, rice vinegar, and sriracha (if using) in a bowl.
- Once the pork belly is cooked, assemble the sliders by placing a piece of pork belly on each slider bun. Top with a generous dollop of kimchi mayo and garnish with sliced green onions.
- Serve immediately and enjoy your delicious sliders!

- For a spicier kick, add more sriracha to the kimchi mayo or top the sliders with sliced jalapeños.
