Description

Delicious Korean BBQ meatballs served with a spicy mayo dip, perfect for a quick and flavorful meal.

Ingredients

Scale
  • 1 pound ground beef (80/20 blend)
  • 1/4 cup almond flour
  • 1/4 cup green onions, finely chopped
  • 2 tablespoons soy sauce (or coconut aminos for a soy-free option)
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon sesame seeds (optional, for garnish)

For the Spicy Mayo Dip:

  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon lime juice
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, almond flour, green onions, soy sauce, sesame oil, garlic powder, ginger powder, black pepper, and egg. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
  4. Bake in the preheated oven for 15-20 minutes, or until the meatballs are cooked through and have a nice golden color.
  5. While the meatballs are baking, prepare the spicy mayo dip by mixing together the mayonnaise, sriracha, lime juice, and garlic powder in a small bowl until smooth.
  6. Once the meatballs are done, remove them from the oven and let them cool slightly. Serve warm, garnished with sesame seeds if desired, alongside the spicy mayo dip.

Notes

  • For added flavor, try incorporating chopped cilantro or parsley into the meatball mixture.
  • If you prefer a sweeter dip, add a small amount of keto-friendly sweetener to the spicy mayo.
