- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup corn (frozen or canned)
- 1 tablespoon lime juice
- Chopped fresh cilantro (for garnish, optional)
- Shredded cheese (for serving, optional)
- Sour cream (for serving, optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced bell pepper and ground beef (or turkey) to the pot. Cook until the meat is browned and cooked through, breaking it up with a spoon as it cooks, about 6-8 minutes.
- Stir in the black beans, pinto beans, diced tomatoes, tomato paste, and beef broth. Mix well to combine.
- Add the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir everything together and bring the mixture to a simmer.
- Reduce the heat to low and let the chili simmer uncovered for at least 30 minutes, stirring occasionally. If you prefer a thicker chili, let it simmer longer.
- In the last 10 minutes of cooking, stir in the corn and lime juice. Adjust seasoning if necessary.
- Serve hot, garnished with fresh cilantro, shredded cheese, and a dollop of sour cream if desired.

- For a vegetarian version, substitute the ground meat with a mix of chopped mushrooms and zucchini.
- Add a teaspoon of cayenne pepper for extra heat or top with jalapeños for a spicy kick.
