- 1 cup almond flour
- 1/4 cup coconut flour
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
- 4 large eggs
- 1 cup unsweetened almond milk
- 1/4 cup melted ghee or olive oil
Instructions
- Begin by setting your oven to 425°F (220°C) and place a 12-cup muffin tin inside to warm for about 10 minutes.
- In a large bowl, mix together the almond flour, coconut flour, baking powder, and sea salt until they are thoroughly combined.
- In a separate bowl, beat the eggs and almond milk together until the mixture is smooth and homogenous.
- Slowly incorporate the wet ingredients into the dry mixture, stirring gently until just combined. Allow the batter to sit for 10 minutes to thicken slightly.
- Once the muffin tin is hot, carefully take it out of the oven and add a teaspoon of melted ghee or olive oil to each muffin cup.
- Evenly distribute the batter into the cups, filling each about halfway full.
- Return the muffin tin to the oven and bake for 20-25 minutes, or until the puffs have risen and turned a beautiful golden brown.
- Take them out of the oven and enjoy them fresh and warm.
Notes
- For a delightful twist, consider folding in 1/2 cup of grated Parmesan cheese into the batter before baking.
- For extra flavor, add a tablespoon of finely chopped chives or parsley to the mixture.
