  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 4 large eggs
  • 1 cup unsweetened almond milk
  • 1/4 cup melted ghee or olive oil

Instructions

  1. Begin by setting your oven to 425°F (220°C) and place a 12-cup muffin tin inside to warm for about 10 minutes.
  2. In a large bowl, mix together the almond flour, coconut flour, baking powder, and sea salt until they are thoroughly combined.
  3. In a separate bowl, beat the eggs and almond milk together until the mixture is smooth and homogenous.
  4. Slowly incorporate the wet ingredients into the dry mixture, stirring gently until just combined. Allow the batter to sit for 10 minutes to thicken slightly.
  5. Once the muffin tin is hot, carefully take it out of the oven and add a teaspoon of melted ghee or olive oil to each muffin cup.
  6. Evenly distribute the batter into the cups, filling each about halfway full.
  7. Return the muffin tin to the oven and bake for 20-25 minutes, or until the puffs have risen and turned a beautiful golden brown.
  8. Take them out of the oven and enjoy them fresh and warm.
