Ingredients

  • 2 (5-ounce) cans tuna, drained
  • 1 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1 cup chopped bell peppers
  • 1/2 cup finely chopped green onions
  • 1/4 cup sweet relish, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sea salt
  • 4 large eggs
  • 1/4 cup sour cream
  • 1/2 cup crushed pork rinds (optional for topping)
  • 1 tablespoon fresh dill (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a spacious bowl, mix together the drained tuna, mayonnaise, mozzarella cheese, chopped bell peppers, green onions, and sweet relish until well incorporated.
  3. In another bowl, beat the eggs with sour cream, garlic powder, dried basil, black pepper, and sea salt until smooth and creamy.
  4. Pour the egg mixture over the tuna mixture, stirring gently to coat all ingredients evenly.
  5. Spoon the combined mixture into the greased baking dish, smoothing it out evenly. Top with crushed pork rinds if desired.
  6. Bake in the oven for 25-30 minutes, or until the casserole is firm and the top is golden.
  7. Allow to cool slightly before serving and garnish with fresh dill.

Notes

  • Crushed pork rinds are optional but add a nice crunch.
