  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 (8-ounce) packages cream cheese, softened
  • ½ cup sour cream
  • ½ cup powdered erythritol
  • 2 large eggs
  • 1 teaspoon peppermint extract
  • ½ teaspoon vanilla extract
  • ¼ cup sugar-free chocolate chips (optional)

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare a muffin tin by lining it with paper liners or greasing it with non-stick spray.
  2. In a mixing bowl, whisk together the almond flour, cocoa powder, erythritol, baking powder, and salt until evenly blended.
  3. Pour in the melted butter and add the vanilla extract, mixing until a dough-like consistency forms.
  4. Spoon the crust mixture into the muffin cups, pressing down firmly to create a solid base.
  5. Bake for 10-12 minutes, then take them out and allow them to cool completely.
  6. In a separate large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  7. Gradually add the sour cream, powdered erythritol, eggs, peppermint extract, and vanilla extract, mixing until well combined and fluffy.
  8. Carefully pour the cheesecake batter over the cooled crusts, filling each cup about three-quarters full.
  9. If desired, sprinkle sugar-free chocolate chips on top.
  10. Return the muffin tin to the oven and bake for another 20-25 minutes, or until the edges are firm while the center remains slightly wobbly.
  11. Let them cool to room temperature, then refrigerate for at least 2 hours to set before serving.

Notes

  • For a more intense mint flavor, increase the peppermint extract to 1 ½ teaspoons.
