Instructions
- Preheat your oven to 325°F (163°C) and prepare a muffin tin by lining it with paper liners or greasing it with non-stick spray.
- In a mixing bowl, whisk together the almond flour, cocoa powder, erythritol, baking powder, and salt until evenly blended.
- Pour in the melted butter and add the vanilla extract, mixing until a dough-like consistency forms.
- Spoon the crust mixture into the muffin cups, pressing down firmly to create a solid base.
- Bake for 10-12 minutes, then take them out and allow them to cool completely.
- In a separate large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the sour cream, powdered erythritol, eggs, peppermint extract, and vanilla extract, mixing until well combined and fluffy.
- Carefully pour the cheesecake batter over the cooled crusts, filling each cup about three-quarters full.
- If desired, sprinkle sugar-free chocolate chips on top.
- Return the muffin tin to the oven and bake for another 20-25 minutes, or until the edges are firm while the center remains slightly wobbly.
- Let them cool to room temperature, then refrigerate for at least 2 hours to set before serving.
Notes
- For a more intense mint flavor, increase the peppermint extract to 1 ½ teaspoons.
