Description

Keto Sushi Rolls are a delicious low-carb alternative to traditional sushi, made with cauliflower rice and fresh ingredients.


Ingredients

  • 1 ½ cups cauliflower rice (fresh or frozen)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon salt
  • 4 sheets nori (seaweed)
  • ½ cup cucumber, julienned
  • ½ cup avocado, sliced
  • ½ cup cooked shrimp or crab meat (optional)
  • Soy sauce or coconut aminos for dipping

Instructions

  1. If using frozen cauliflower rice, thaw and drain any excess moisture. If using fresh, pulse cauliflower florets in a food processor until they resemble rice.
  2. In a medium bowl, combine cauliflower rice, rice vinegar, sesame oil, and salt. Mix well and let it sit for 10 minutes to absorb the flavors.
  3. Place a bamboo sushi mat on a flat surface and lay a sheet of nori, shiny side down, on the mat.
  4. With wet hands, spread about ¾ cup of the cauliflower rice mixture evenly over the nori, leaving a 1-inch border at the top.
  5. Arrange a line of cucumber, avocado, and shrimp or crab meat (if using) horizontally across the center of the rice.
  6. Starting from the bottom, carefully roll the sushi away from you, pressing gently but firmly to keep the roll tight. Use the bamboo mat to help shape it as you roll.
  7. Once rolled, use a sharp knife to slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for cleaner slices.
  8. Repeat the process with the remaining nori sheets and filling.
  9. Serve the sushi rolls with soy sauce or coconut aminos for dipping.

Notes

  • For added flavor, sprinkle sesame seeds on the rice before rolling or drizzle with sriracha for a spicy kick.
  • Substitute the fillings with your favorite low-carb vegetables or proteins, such as bell peppers, smoked salmon, or cream cheese for a different taste.
