- 1 cup almond flour
- 1/4 cup butter, melted
- 1/4 cup erythritol or preferred sweetener
- 1 cup cream cheese, softened
- 1/2 cup heavy cream
- 1 cup strawberries, sliced
- 1/4 cup sugar-free strawberry gelatin
- 1 cup boiling water
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour, melted butter, and erythritol until combined.
- Press the mixture into the bottom of a greased 9×9 inch baking dish.
- Bake for 10-12 minutes or until golden brown.
- In another bowl, beat the cream cheese until smooth.
- Add heavy cream and mix until well combined.
- Spread the cream cheese mixture over the cooled crust.
- In a separate bowl, dissolve the sugar-free strawberry gelatin in boiling water.
- Add sliced strawberries to the gelatin mixture and stir.
- Pour the strawberry mixture over the cream cheese layer.
- Refrigerate for at least 2 hours before serving.
