Ingredients

  • 1 cup almond flour
  • 1/4 cup butter, melted
  • 1/4 cup erythritol or preferred sweetener
  • 1 cup cream cheese, softened
  • 1/2 cup heavy cream
  • 1 cup strawberries, sliced
  • 1/4 cup sugar-free strawberry gelatin
  • 1 cup boiling water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, melted butter, and erythritol until combined.
  3. Press the mixture into the bottom of a greased 9×9 inch baking dish.
  4. Bake for 10-12 minutes or until golden brown.
  5. In another bowl, beat the cream cheese until smooth.
  6. Add heavy cream and mix until well combined.
  7. Spread the cream cheese mixture over the cooled crust.
  8. In a separate bowl, dissolve the sugar-free strawberry gelatin in boiling water.
  9. Add sliced strawberries to the gelatin mixture and stir.
  10. Pour the strawberry mixture over the cream cheese layer.
  11. Refrigerate for at least 2 hours before serving.
