- 1 pound thinly sliced beef (ribeye or sirloin)
- 1 tablespoon sesame oil
- 1 tablespoon gluten-free soy sauce or tamari
- 1 tablespoon gochujang (Korean chili paste)
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- 1 cup chopped kimchi
- 1 cup sliced bell peppers (any color)
- 1 cup sliced onions
- 1 cup shredded mozzarella cheese
- 2 green onions, finely chopped (for garnish)
- Salt and pepper to taste
Instructions
- In a large skillet, heat the sesame oil over medium-high heat.
- Introduce the thinly sliced beef to the skillet, seasoning it with soy sauce, gochujang, garlic powder, ginger, salt, and pepper. Sauté for about 5-7 minutes, stirring often, until the beef is nicely browned and fully cooked.
- Add the sliced bell peppers and onions to the skillet. Continue to cook for an additional 3-4 minutes, allowing the vegetables to soften and release their flavors.
- Incorporate the chopped kimchi into the mixture, stirring well, and let it cook for another 2 minutes until everything is heated through.
- Take the skillet off the heat and generously sprinkle the shredded mozzarella cheese over the beef and vegetable mixture. Cover the skillet with a lid for 1-2 minutes, allowing the cheese to melt into a gooey layer.
- Spoon the bulgogi mixture into bowls and top with the chopped green onions for a fresh finish.

- For an extra layer of heat, consider adding sliced jalapeños or a dash of red pepper flakes.
- Feel free to swap the beef for chicken or tofu for a different protein twist.
- For a refreshing crunch, pair with fresh cucumber slices on the side.
