  • 1 tablespoon sesame oil
  • 1 tablespoon gluten-free soy sauce or tamari
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 cup chopped kimchi
  • 1 cup sliced bell peppers (any color)
  • 1 cup sliced onions
  • 1 cup shredded mozzarella cheese
  • 2 green onions, finely chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the sesame oil over medium-high heat.
  2. Introduce the thinly sliced beef to the skillet, seasoning it with soy sauce, gochujang, garlic powder, ginger, salt, and pepper. Sauté for about 5-7 minutes, stirring often, until the beef is nicely browned and fully cooked.
  3. Add the sliced bell peppers and onions to the skillet. Continue to cook for an additional 3-4 minutes, allowing the vegetables to soften and release their flavors.
  4. Incorporate the chopped kimchi into the mixture, stirring well, and let it cook for another 2 minutes until everything is heated through.
  5. Take the skillet off the heat and generously sprinkle the shredded mozzarella cheese over the beef and vegetable mixture. Cover the skillet with a lid for 1-2 minutes, allowing the cheese to melt into a gooey layer.
  6. Spoon the bulgogi mixture into bowls and top with the chopped green onions for a fresh finish.
