Ingredients

  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, finely chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon chili flakes (optional)
  • 1 can (28 ounces) diced tomatoes
  • Salt and freshly ground black pepper to taste
  • 6 large eggs
  • Chopped fresh cilantro or basil (for garnish)

Instructions

  1. Warm the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and green bell pepper, sautéing until tender and translucent (about 5-7 minutes).
  3. Incorporate the chopped garlic, ground coriander, sweet paprika, and chili flakes, stirring for an additional 1-2 minutes until aromatic.
  4. Pour in the diced tomatoes, season with salt and pepper, and let it simmer for approximately 10 minutes, stirring occasionally.
  5. Make small indentations in the sauce and crack an egg into each indentation. Cover the skillet and cook for 5-8 minutes, or until the eggs reach your desired doneness.
  6. Remove from heat and sprinkle with fresh cilantro or basil before serving.
