- 1 can (28 ounces) diced tomatoes
- Salt and freshly ground black pepper to taste
- 6 large eggs
- Chopped fresh cilantro or basil (for garnish)
Instructions
- Warm the olive oil in a large skillet over medium heat.
- Add the chopped onion and green bell pepper, sautéing until tender and translucent (about 5-7 minutes).
- Incorporate the chopped garlic, ground coriander, sweet paprika, and chili flakes, stirring for an additional 1-2 minutes until aromatic.
- Pour in the diced tomatoes, season with salt and pepper, and let it simmer for approximately 10 minutes, stirring occasionally.
- Make small indentations in the sauce and crack an egg into each indentation. Cover the skillet and cook for 5-8 minutes, or until the eggs reach your desired doneness.
- Remove from heat and sprinkle with fresh cilantro or basil before serving.
Notes
- For an extra layer of flavor, add crumbled goat cheese on top just before serving.
