Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 large eggs
  • Salt and pepper to taste
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, and sauté until softened, about 5-7 minutes.
  2. Stir in the minced garlic, cumin, smoked paprika, and red pepper flakes (if using). Cook for an additional 1-2 minutes until fragrant.
  3. Pour in the diced tomatoes with their juices, and season with salt and pepper. Simmer for about 10 minutes, allowing the mixture to thicken slightly.
  4. Make four small wells in the tomato mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.
  5. Remove from heat and garnish with chopped parsley or cilantro before serving.

Notes

  • For added flavor, sprinkle feta cheese on top before serving.
  • You can customize the vegetables by adding spinach or zucchini for extra nutrients.
