- 2 tablespoons olive oil
- 1 medium onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (optional)
- 1 can (14.5 ounces) diced tomatoes, undrained
- 4 large eggs
- Salt and pepper to taste
- Fresh parsley or cilantro, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, and sauté until softened, about 5-7 minutes.
- Stir in the minced garlic, cumin, smoked paprika, and red pepper flakes (if using). Cook for an additional 1-2 minutes until fragrant.
- Pour in the diced tomatoes with their juices, and season with salt and pepper. Simmer for about 10 minutes, allowing the mixture to thicken slightly.
- Make four small wells in the tomato mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.
- Remove from heat and garnish with chopped parsley or cilantro before serving.
Notes
- For added flavor, sprinkle feta cheese on top before serving.
- You can customize the vegetables by adding spinach or zucchini for extra nutrients.
