Ingredients

  • 4 salmon fillets (6 ounces each)
  • 2 tablespoons extra virgin olive oil
  • Sea salt and freshly ground black pepper, to taste
  • 1 cup thick cream
  • 2 tablespoons fresh dill, finely chopped (or 1 tablespoon dried)
  • Zest from 1 lemon
  • 2 tablespoons freshly squeezed lemon juice
  • 1 clove garlic, finely minced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Use paper towels to gently dry the salmon fillets, then season them with sea salt and black pepper on both sides.
  3. In a large oven-safe skillet, warm the olive oil over medium-high heat.
  4. Once the oil is shimmering, place the salmon fillets in the skillet, skin-side down, and sear for about 4-5 minutes until the skin is golden and crispy.
  5. Carefully flip the fillets over and transfer the skillet to the preheated oven.
  6. Bake the salmon for an additional 8-10 minutes, or until fully cooked and flakes easily with a fork.
  7. Meanwhile, prepare the creamy sauce by combining the thick cream, chopped dill, lemon zest, lemon juice, and minced garlic in a small saucepan over medium heat.
  8. Stir continuously until the mixture reaches a gentle simmer, then cook for 3-5 minutes, stirring occasionally, until the sauce thickens.
  9. Once the salmon is done baking, remove it from the oven and spoon the creamy lemon-dill sauce over each fillet before serving.

Notes

  • For a stronger dill flavor, use fresh dill instead of dried.
  • Ensure the salmon is cooked to an internal temperature of 145°F (63°C).
