A delicious and easy-to-make Keto Salmon dish topped with a creamy lemon-dill sauce.

- 4 salmon fillets (6 ounces each)
- 2 tablespoons extra virgin olive oil
- Sea salt and freshly ground black pepper, to taste
- 1 cup thick cream
- 2 tablespoons fresh dill, finely chopped (or 1 tablespoon dried)
- Zest from 1 lemon
- 2 tablespoons freshly squeezed lemon juice
- 1 clove garlic, finely minced
Instructions
- Preheat your oven to 400°F (200°C).
- Use paper towels to gently dry the salmon fillets, then season them with sea salt and black pepper on both sides.
- In a large oven-safe skillet, warm the olive oil over medium-high heat.
- Once the oil is shimmering, place the salmon fillets in the skillet, skin-side down, and sear for about 4-5 minutes until the skin is golden and crispy.
- Carefully flip the fillets over and transfer the skillet to the preheated oven.
- Bake the salmon for an additional 8-10 minutes, or until fully cooked and flakes easily with a fork.
- Meanwhile, prepare the creamy sauce by combining the thick cream, chopped dill, lemon zest, lemon juice, and minced garlic in a small saucepan over medium heat.
- Stir continuously until the mixture reaches a gentle simmer, then cook for 3-5 minutes, stirring occasionally, until the sauce thickens.
- Once the salmon is done baking, remove it from the oven and spoon the creamy lemon-dill sauce over each fillet before serving.
Notes
- For a stronger dill flavor, use fresh dill instead of dried.
- Ensure the salmon is cooked to an internal temperature of 145°F (63°C).
