  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 cup heavy whipping cream
  • 1 tablespoon powdered erythritol (for sweetening cream)
  • 1 cup mixed berries (such as raspberries, blueberries, and strawberries)
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. Preheat your oven to 250°F (120°C) and prepare a baking sheet with parchment paper, marking a 9-inch circle on it as a guide.
  2. In a spotless mixing bowl, whip the egg whites at medium speed until they start to froth.
  3. Incorporate the cream of tartar and continue beating until soft peaks begin to form.
  4. Gradually introduce the granulated erythritol, one tablespoon at a time, while increasing the speed to high, until the mixture becomes glossy and stiff peaks are achieved (about 5-7 minutes).
  5. Carefully mix in the vanilla extract and lemon juice.
  6. Using the circle as a reference, dollop the meringue mixture onto the parchment, creating a gentle well in the center.
  7. Place the baking sheet in the oven and let it bake for one hour.
  8. Once baked, turn off the oven and allow the pavlova to cool inside for at least an hour (or overnight) to avoid cracking.
  9. When cooled, whip the heavy cream with the powdered erythritol until soft peaks form.
  10. Gently transfer the pavlova to a serving dish, spread the whipped cream on top, and arrange the mixed berries.
  11. Finish with a sprinkle of fresh mint leaves for garnish, if desired. Enjoy immediately or chill until ready to serve.
