- 2 tablespoons granulated erythritol (or your preferred keto sweetener)
- 1 large egg
- 2 tablespoons unsweetened almond milk
- 2 tablespoons melted coconut oil (or unsalted butter)
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a microwave-safe mug, combine the almond flour, cocoa powder, baking powder, erythritol, and salt. Mix well to ensure there are no clumps.
- Add the egg to the dry ingredients and mix until fully combined.
- Stir in the almond milk, melted coconut oil, and vanilla extract until the batter is smooth and well incorporated.
- Microwave the mug on high for 60-90 seconds. Start checking at 60 seconds; the cake is done when it has risen and is set in the middle.
- Allow the mug cake to cool for a minute before enjoying.
