  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup almond flour
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Process fresh cauliflower florets in a food processor until they achieve a rice-like texture. If using frozen cauliflower, ensure it’s fully thawed and squeeze out any excess moisture.
  2. In a mixing bowl, combine the cauliflower rice, grated cheddar cheese, egg, garlic powder, onion powder, salt, black pepper, and almond flour. Stir until all ingredients are evenly incorporated.
  3. Form the mixture into four equal-sized patties, each about 1/2 inch thick.
  4. Heat a tablespoon of olive oil in a skillet over medium heat. Once the oil is shimmering, gently place two patties in the skillet.
  5. Cook the patties for about 4-5 minutes on each side until they turn golden brown and develop a crispy exterior.
  6. Repeat this process with the remaining oil and patties.
  7. Serve the fritters warm, optionally topped with extra cheese or fresh herbs.
