- 2 cups cauliflower rice (fresh or frozen)
- 1 cup grated cheddar cheese
- 1 large egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup almond flour
- 2 tablespoons olive oil (for frying)
Instructions
- Process fresh cauliflower florets in a food processor until they achieve a rice-like texture. If using frozen cauliflower, ensure it’s fully thawed and squeeze out any excess moisture.
- In a mixing bowl, combine the cauliflower rice, grated cheddar cheese, egg, garlic powder, onion powder, salt, black pepper, and almond flour. Stir until all ingredients are evenly incorporated.
- Form the mixture into four equal-sized patties, each about 1/2 inch thick.
- Heat a tablespoon of olive oil in a skillet over medium heat. Once the oil is shimmering, gently place two patties in the skillet.
- Cook the patties for about 4-5 minutes on each side until they turn golden brown and develop a crispy exterior.
- Repeat this process with the remaining oil and patties.
- Serve the fritters warm, optionally topped with extra cheese or fresh herbs.

- Enhance the flavor by incorporating cooked bacon bits or finely chopped green onions into the cauliflower mixture before forming the patties.
