  • 1 small onion, diced
  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 large egg, beaten
  • 1 tablespoon olive oil
  • 1 package (8 ounces) almond flour
  • 1/4 cup cream cheese, softened
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  3. Add ground beef or turkey, cooking until browned. Stir in cauliflower rice, oregano, thyme, paprika, salt, and pepper. Cook for an additional 5 minutes, then remove from heat and let cool slightly.
  4. In a mixing bowl, combine almond flour, cream cheese, and baking powder. Mix until a dough forms. If the dough is too crumbly, add a teaspoon of water at a time until it holds together.
  5. Divide the dough into 8 equal portions. Roll each portion into a circle about 1/4 inch thick.
  6. Place a spoonful of the meat mixture in the center of each circle, sprinkle with cheddar cheese, and fold the dough over to create a half-moon shape. Press the edges with a fork to seal.
  7. Place the meat pies on a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a golden finish.
  8. Bake for 25-30 minutes or until golden brown.
  9. Let the pies cool for a few minutes before serving.

Notes

  • For a spicier version, add diced jalapeños or red pepper flakes to the meat mixture.
  • You can also substitute the ground meat with shredded chicken or pork for a different flavor.
