  • 1/4 cup coconut flour
  • 1 tablespoon avocado oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup diced bell peppers (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. In a spacious bowl, mix together the chopped spinach, cottage cheese, goat cheese, egg, thyme, onion powder, sea salt, black pepper, and coconut flour until everything is evenly blended.
  3. Lightly coat a 9-inch round baking dish with avocado oil.
  4. Transfer the spinach mixture into the dish, ensuring it is spread out evenly.
  5. Top the mixture with grated Parmesan cheese.
