- 1/4 cup coconut flour
- 1 tablespoon avocado oil
- 1/2 cup grated Parmesan cheese
- 1/4 cup diced bell peppers (optional)
Instructions
- Preheat your oven to 375°F.
- In a spacious bowl, mix together the chopped spinach, cottage cheese, goat cheese, egg, thyme, onion powder, sea salt, black pepper, and coconut flour until everything is evenly blended.
- Lightly coat a 9-inch round baking dish with avocado oil.
- Transfer the spinach mixture into the dish, ensuring it is spread out evenly.
- Top the mixture with grated Parmesan cheese.
- If desired, sprinkle diced bell peppers over the top for added crunch and flavor.
- Place the dish in the oven and bake for 30-35 minutes, or until the frittata is puffed up and the top is a lovely golden hue.
- Let it rest for about 10 minutes before cutting into wedges and serving.
