A delicious low-carb version of the classic General Tso’s Chicken, perfect for those following a keto diet.


Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 1/4 cup erythritol or other keto-friendly sweetener
  • 1/2 tsp red pepper flakes
  • 2 green onions, chopped
  • 1 tbsp cornstarch (optional for thickening)

Instructions

  1. Cut the chicken thighs into bite-sized pieces.
  2. In a bowl, mix soy sauce, rice vinegar, sesame oil, ginger, garlic, erythritol, and red pepper flakes.
  3. Add the chicken to the marinade and let it sit for at least 30 minutes.
  4. Heat a skillet over medium-high heat and add the marinated chicken.
  5. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  6. If using, mix cornstarch with a little water and add to the skillet to thicken the sauce.
  7. Garnish with chopped green onions before serving.

Notes

  • For a spicier version, increase the amount of red pepper flakes.
  • Serve with cauliflower rice for a complete meal.
