A delicious low-carb version of the classic General Tso’s Chicken, perfect for those following a keto diet.
Ingredients

- 1 lb chicken thighs, boneless and skinless
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 1/4 cup erythritol or other keto-friendly sweetener
- 1/2 tsp red pepper flakes
- 2 green onions, chopped
- 1 tbsp cornstarch (optional for thickening)
Instructions
- Cut the chicken thighs into bite-sized pieces.
- In a bowl, mix soy sauce, rice vinegar, sesame oil, ginger, garlic, erythritol, and red pepper flakes.
- Add the chicken to the marinade and let it sit for at least 30 minutes.
- Heat a skillet over medium-high heat and add the marinated chicken.
- Cook until the chicken is browned and cooked through, about 5-7 minutes.
- If using, mix cornstarch with a little water and add to the skillet to thicken the sauce.
- Garnish with chopped green onions before serving.
Notes
- For a spicier version, increase the amount of red pepper flakes.
- Serve with cauliflower rice for a complete meal.
- Make sure to use a low-carb sweetener to keep it keto-friendly.
