- 1/2 cup unsalted butter, softened
- 1 cup erythritol or another keto-friendly sweetener
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened almond milk
- 1/4 teaspoon almond extract (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it and placing parchment paper at the bottom.
- In a separate bowl, combine the almond flour, cocoa powder, baking powder, and salt, mixing them well to ensure even distribution.
- In a large bowl, beat the softened butter and erythritol together until the mixture becomes light and fluffy, which should take around 3-4 minutes.
- Incorporate the eggs into the butter mixture one at a time, ensuring each egg is fully blended before adding the next. Mix in the vanilla extract and, if desired, the almond extract.
- Slowly fold the dry ingredients into the wet mixture, alternating with the almond milk. Start and finish with the dry ingredients, mixing until everything is just combined without overmixing.
- Transfer the batter into the prepared cake pan, smoothing the surface with a spatula for an even top.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Once done, let the cake cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.
- Enjoy the cake as is, or top it with a dollop of whipped cream or a sugar-free frosting for an extra treat.
