  • 1/2 cup unsalted butter, softened
  • 1 cup erythritol or another keto-friendly sweetener
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened almond milk
  • 1/4 teaspoon almond extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it and placing parchment paper at the bottom.
  2. In a separate bowl, combine the almond flour, cocoa powder, baking powder, and salt, mixing them well to ensure even distribution.
  3. In a large bowl, beat the softened butter and erythritol together until the mixture becomes light and fluffy, which should take around 3-4 minutes.
  4. Incorporate the eggs into the butter mixture one at a time, ensuring each egg is fully blended before adding the next. Mix in the vanilla extract and, if desired, the almond extract.
  5. Slowly fold the dry ingredients into the wet mixture, alternating with the almond milk. Start and finish with the dry ingredients, mixing until everything is just combined without overmixing.
  6. Transfer the batter into the prepared cake pan, smoothing the surface with a spatula for an even top.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Once done, let the cake cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.
  8. Enjoy the cake as is, or top it with a dollop of whipped cream or a sugar-free frosting for an extra treat.
