- 8 ounces corned beef, sliced thin
- 4 ounces Swiss cheese, sliced
- 1 cup sauerkraut, drained and rinsed
- 2 tablespoons Dijon mustard
- 1 tablespoon mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small bowl, mix together the Dijon mustard, mayonnaise, garlic powder, onion powder, salt, and pepper. Set aside.
- Lay out the slices of corned beef on a clean surface, slightly overlapping them to create a larger surface area.
- Spread a thin layer of the mustard-mayo mixture over the corned beef.
- Place a slice of Swiss cheese on top of the corned beef, followed by a layer of sauerkraut.
- Carefully roll up the corned beef tightly, starting from one end, and place the roll seam-side down on the prepared baking sheet.
- Brush the tops of the roll-ups with olive oil to help them crisp up during baking.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and the roll-ups are golden brown.
- Remove from the oven and let cool for a few minutes before slicing into bite-sized pieces.
- Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add a few slices of jalapeño or a sprinkle of red pepper flakes to the filling.
- If you prefer a vegetarian option, substitute the corned beef with sliced roasted bell peppers or mushrooms.
