- 4 large eggs
- 1/2 cup almond flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon erythritol (or sweetener of choice)
- Butter or oil for cooking
Instructions
- In a mixing bowl, combine the cottage cheese and eggs. Whisk until well blended.
- Add the almond flour, baking powder, salt, vanilla extract, and erythritol. Mix until just combined; the batter will be slightly lumpy.
- Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook for 2-3 minutes or until bubbles form on the surface.
- Flip the pancakes and cook for an additional 2-3 minutes until golden brown.
- Remove from the skillet and keep warm while you repeat with the remaining batter.
Notes
- For a flavor boost, add a teaspoon of cinnamon or a handful of blueberries to the batter.
- Serve with sugar-free syrup, fresh berries, or a dollop of whipped cream for a delicious topping.
