  • 1 tablespoon erythritol (or sweetener of choice)
  • Butter or oil for cooking

Instructions

  1. In a mixing bowl, combine the cottage cheese and eggs. Whisk until well blended.
  2. Add the almond flour, baking powder, salt, vanilla extract, and erythritol. Mix until just combined; the batter will be slightly lumpy.
  3. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
  4. Pour about 1/4 cup of batter onto the skillet for each pancake.
  5. Cook for 2-3 minutes or until bubbles form on the surface.
  6. Flip the pancakes and cook for an additional 2-3 minutes until golden brown.
