- 2 cups almond flour
- 1/2 cup erythritol (or preferred keto sweetener)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 3 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1/4 cup erythritol (for coating)
- 1 teaspoon ground cinnamon (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or coconut oil.
- In a large mixing bowl, combine almond flour, erythritol, baking powder, baking soda, salt, and 1 teaspoon of cinnamon. Mix well.
- In another bowl, whisk together the eggs, almond milk, melted coconut oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
- Bake for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
- While the donuts are baking, mix 1/4 cup erythritol and 1 teaspoon cinnamon in a small bowl for the coating.
- Once the donuts are done, remove them from the oven and let them cool in the pan for about 5 minutes. Then, transfer them to a wire rack to cool completely.
- Once cooled, dip each donut in the cinnamon sugar mixture until fully coated.
Notes
- For a chocolate twist, add 2 tablespoons of unsweetened cocoa powder to the dry ingredients.
- For a more indulgent treat, drizzle melted sugar-free chocolate over the cooled donuts.
- Serve with pork rinds or celery sticks for a crunchy side option.
