Ingredients

  • 1/2 cup erythritol (or preferred keto sweetener)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 cup erythritol (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or coconut oil.
  2. In a large mixing bowl, combine almond flour, erythritol, baking powder, baking soda, salt, and 1 teaspoon of cinnamon. Mix well.
  3. In another bowl, whisk together the eggs, almond milk, melted coconut oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
  6. Bake for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
  7. While the donuts are baking, mix 1/4 cup erythritol and 1 teaspoon cinnamon in a small bowl for the coating.
  8. Once the donuts are done, remove them from the oven and let them cool in the pan for about 5 minutes. Then, transfer them to a wire rack to cool completely.
  9. Once cooled, dip each donut in the cinnamon sugar mixture until fully coated.

Notes

  • For a chocolate twist, add 2 tablespoons of unsweetened cocoa powder to the dry ingredients.
