Ingredients

  • 2 ounces high-quality unsweetened dark chocolate (at least 70% cocoa)
  • 2 tablespoons grass-fed butter
  • 2 large eggs, separated
  • 2 tablespoons powdered erythritol (or your favorite keto-friendly sweetener)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon cream of tartar
  • A small pinch of sea salt

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare two ramekins by greasing them with butter and coating the insides with powdered erythritol.
  2. Melt the dark chocolate and butter together in a small saucepan over low heat, stirring continuously until smooth. Remove from heat and let cool for a few minutes.
  3. In a mixing bowl, whisk together the egg yolks, powdered erythritol, and vanilla extract until creamy. Gradually mix in the cooled chocolate mixture until smooth.
  4. In another bowl, whip the egg whites with cream of tartar and a pinch of sea salt until stiff peaks form.
  5. Carefully fold the whipped egg whites into the chocolate mixture in three parts, maintaining the airy texture.
  6. Evenly distribute the soufflé batter between the prepared ramekins.
  7. Bake in the preheated oven for 12 to 15 minutes, until puffed and firm around the edges, with slightly soft centers.
  8. Serve immediately, optionally garnished with powdered erythritol or keto-friendly whipped cream.

Notes

  • For a mocha flavor, mix in 1 teaspoon of instant coffee granules with the melted chocolate.
  • For a deeper chocolate experience, replace half of the dark chocolate with unsweetened cocoa powder and adjust the sweetener accordingly.
