  • 4 ounces sugar-free dark chocolate, melted and cooled

Instructions

  1. Preheat your oven to 350°F.
  2. In a large bowl, mix together the almond flour, cocoa powder, granulated erythritol, melted butter, and vanilla extract until the mixture resembles a crumbly dough.
  3. Firmly press this mixture into a 9-inch pie pan, ensuring an even layer across the bottom and up the sides.
  4. Bake the crust for about 10-12 minutes, then take it out of the oven and allow it to cool completely.
  5. While the crust is cooling, whip the heavy cream in a separate bowl until soft peaks form.
  6. In another bowl, blend the softened cream cheese with powdered erythritol until the mixture is creamy and smooth.
  7. Gradually add in the melted chocolate and the remaining vanilla extract, stirring until everything is well combined.
  8. Carefully fold the whipped cream into the chocolate mixture, ensuring a light and airy texture without deflating the cream.
  9. Once the crust has cooled, pour the luscious chocolate filling into it, smoothing the top with a spatula.
  10. Place the pie in the refrigerator for a minimum of 2 hours to allow it to set properly before serving.
