- 2 cups almond flour
- 1 cup shredded mozzarella cheese
- 1/2 cup softened cream cheese
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
- In a microwave-safe bowl, blend the mozzarella and cream cheese together.
- Heat in the microwave for 30 seconds, then stir. Repeat until fully melted and creamy.
- In a separate bowl, whisk together the almond flour, baking powder, garlic powder, onion powder, salt, and black pepper.
- Pour the melted cheese mixture and the eggs into the dry ingredients, mixing until a cohesive dough forms.
- If the dough is too sticky, incorporate a bit more almond flour.
- Gently mix in the grated Parmesan and parsley if desired.
- Shape the dough into small balls, roughly the size of golf balls, and arrange them on the prepared baking sheet.
- Bake for 15 to 20 minutes, or until golden brown and firm to the touch.
- Let them cool slightly on the baking sheet before transferring to a wire rack to cool completely.
Notes
- These rolls are best enjoyed fresh but can be stored in an airtight container for a few days.
