Ingredients

  • 1 cup cauliflower rice
  • 4 sheets nori
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1/2 cup imitation crab meat
  • 2 tablespoons cream cheese
  • Soy sauce for dipping

Instructions

  1. Prepare cauliflower rice by grating cauliflower and steaming it until tender.
  2. Lay a sheet of nori on a bamboo sushi mat.
  3. Spread a thin layer of cauliflower rice over the nori, leaving a small border at the top.
  4. Add slices of avocado, cucumber, and imitation crab meat on top of the rice.
  5. Spread a small amount of cream cheese over the fillings.
  6. Carefully roll the sushi away from you, using the mat to help shape it tightly.
  7. Seal the edge of the nori with a little water.
  8. Slice the roll into bite-sized pieces and serve with soy sauce.
