  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 4 large eggs (for filling)
  • Salt and pepper to taste
  • Cooking spray or oil for frying

Instructions

  1. Preheat your oven to 350°F and prepare a baking sheet with parchment paper.
  2. In a spacious bowl, mix together the almond flour, baking powder, garlic powder, onion powder, and salt until evenly combined.
  3. In another bowl, beat the melted butter and two eggs together until smooth. Gradually incorporate this mixture into the dry ingredients, stirring until a cohesive dough forms.
  4. Gently fold in the shredded cheddar cheese until well distributed.
  5. Using a spoon, portion out the dough onto the lined baking sheet, creating 8 evenly sized mounds. Lightly press each mound down to flatten them slightly.
  6. Bake the biscuits in the preheated oven for about 15-20 minutes, or until they turn a lovely golden brown. Allow them to cool for a few minutes on a wire rack.
  7. While the biscuits are cooling, heat a skillet over medium heat and lightly grease it with cooking spray or oil. Crack the four eggs into the skillet and cook them to your desired doneness, seasoning with salt and pepper as you go.
  8. After the biscuits have cooled enough to handle, carefully slice each one in half horizontally. Place a cooked egg on the bottom half of each biscuit and cap it with the top half.
