Instructions

  1. Begin by heating the olive oil in a large skillet over medium-high heat. Add the thinly sliced beef and sear until browned, approximately 3-4 minutes. Once browned, transfer the beef to a plate and keep it warm.
  2. In the same skillet, toss in the chopped onion and minced garlic. Sauté for about 2-3 minutes, allowing the onion to soften and become translucent.
  3. Introduce the sliced mushrooms and smoked paprika to the skillet, cooking for an additional 5 minutes until the mushrooms are tender and fragrant.
  4. Gradually pour in the beef stock and soy sauce, stirring to blend the flavors. Allow the mixture to simmer for 5 minutes to reduce slightly.
  5. Lower the heat and gently fold in the crème fraîche, then return the beef to the skillet. Stir well to combine and season with salt and black pepper to your liking. Keep the mixture warm over low heat.
  6. In a separate pan, melt the ghee over medium heat. Add the grated cauliflower and sauté for about 5-7 minutes until it becomes tender. Season with salt and black pepper to enhance the flavor.
  7. Plate the beef stroganoff atop the cauliflower medley, finishing with a sprinkle of fresh chives for a vibrant touch.
