Description

A delicious Keto Beef Stroganoff served over creamy cauliflower mash, perfect for a low-carb meal.


Ingredients

  • 1 pound beef sirloin, sliced into thin strips
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 head cauliflower, cut into florets
  • 2 tablespoons butter
  • 1/4 cup cream cheese
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
  2. In the same skillet, add the diced onion and cook until translucent, about 3 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender, about 5 minutes.
  3. Return the beef to the skillet and stir in the beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer and cook for 5 minutes.
  4. Reduce the heat to low and stir in the heavy cream. Allow to simmer for an additional 5 minutes, stirring occasionally. Season with salt and pepper to taste.
  5. While the stroganoff simmers, prepare the cauliflower mash. Steam the cauliflower florets until tender, about 10 minutes.
  6. In a food processor, combine the steamed cauliflower, butter, cream cheese, salt, and pepper. Blend until smooth and creamy.
  7. Serve the beef stroganoff over the cauliflower mash, garnished with fresh parsley.

Notes

  • For added flavor, consider using a splash of red wine in the stroganoff. Just be sure to let it cook down before adding the broth.
  • You can substitute the beef with chicken or turkey for a different protein option, adjusting cooking times as necessary.
