A delicious Keto Beef Stroganoff served over creamy cauliflower mash, perfect for a low-carb meal.

- 1 pound beef sirloin, sliced into thin strips
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 cup heavy cream
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
- 1 head cauliflower, cut into florets
- 2 tablespoons butter
- 1/4 cup cream cheese
- Salt and pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the diced onion and cook until translucent, about 3 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender, about 5 minutes.
- Return the beef to the skillet and stir in the beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer and cook for 5 minutes.
- Reduce the heat to low and stir in the heavy cream. Allow to simmer for an additional 5 minutes, stirring occasionally. Season with salt and pepper to taste.
- While the stroganoff simmers, prepare the cauliflower mash. Steam the cauliflower florets until tender, about 10 minutes.
- In a food processor, combine the steamed cauliflower, butter, cream cheese, salt, and pepper. Blend until smooth and creamy.
- Serve the beef stroganoff over the cauliflower mash, garnished with fresh parsley.
Notes
- For added flavor, consider using a splash of red wine in the stroganoff. Just be sure to let it cook down before adding the broth.
- You can substitute the beef with chicken or turkey for a different protein option, adjusting cooking times as necessary.
