- 2 ripe avocados
- 4 large eggs
- 1/2 cup grated mozzarella cheese
- 1/4 cup crispy bacon bits

- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon onion powder
- 1 tablespoon finely chopped parsley (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the avocados in half and remove the pit.
- Scoop out a bit more flesh to create enough room for the eggs.
- Arrange the avocado halves in a baking dish with the cut sides facing up.
- Gently crack an egg into each avocado half, keeping the yolk intact.
- Evenly distribute the mozzarella cheese, bacon bits, sea salt, black pepper, and onion powder over the eggs.
- Place the dish in the oven and bake for 15-20 minutes, or until the eggs reach your preferred doneness.
- Optionally, sprinkle with chopped parsley before serving.
