Ingredients

  • 2 ripe avocados
  • 1 pound ground beef or turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the avocados in half and remove the pits. Scoop out a little bit of the flesh to create a larger cavity for the filling. Set the avocado halves aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add the minced garlic and cook for an additional 1 minute until fragrant.
  5. Add the ground beef or turkey to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  6. Stir in the chili powder, cumin, paprika, salt, and pepper. Mix well and cook for another 2-3 minutes to let the spices combine.
  7. Remove the skillet from heat and stir in half of the shredded cheddar cheese.
  8. Place the avocado halves in a baking dish and fill each half with the spiced meat mixture.
  9. Top each filled avocado with the remaining cheddar cheese.
  10. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro or parsley if desired.

Notes

  • For a spicier version, add diced jalapeños to the meat mixture.
  • You can substitute the ground meat with cooked shredded chicken or a plant-based meat alternative for a different flavor profile.
