- 1/4 cup finely diced onion
- 2 cloves garlic, minced
- 2 large eggs
- 2 tablespoons Worcestershire sauce
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon mixed Italian herbs
- 8 strips of crispy bacon
- 1/2 cup sugar-free ketchup (for glazing)
Instructions
- Preheat your oven to 350°F.
- In a spacious bowl, blend together the ground beef, ground pork, almond flour, Parmesan, diced onion, minced garlic, eggs, Worcestershire sauce, salt, pepper, and Italian herbs until thoroughly mixed.
- Form the mixture into a loaf shape and place it in a baking dish lined with parchment paper.
- Drape the bacon strips over the meatloaf, overlapping slightly and tucking the ends underneath.
- Coat the top of the meatloaf with sugar-free ketchup for glazing.
- Bake in the oven for 60-70 minutes, or until the internal temperature reaches 160°F.
- Allow the meatloaf to rest for about 10 minutes before slicing into portions.
