  • 2 cups collard greens, finely chopped
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 medium tomato, chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon chili flakes (adjust to preference)
  • Salt and black pepper to taste
  • 1 block (14 ounces) firm tofu, pressed and drained
  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon peanut oil
  • 1 tablespoon lime juice

Instructions

  1. In a large frying pan, warm the olive oil over medium heat. Add the chopped onion and sauté for around 5 minutes until it becomes soft and translucent.
  2. Incorporate the minced garlic and ginger, stirring for another minute until the mixture is aromatic.
  3. Toss in the chopped tomato along with the cumin, coriander, chili flakes, salt, and pepper. Cook for 3-4 minutes, allowing the tomato to break down and meld with the spices.
  4. Introduce the collard greens to the pan, mixing thoroughly. Cover and let it simmer for 5-7 minutes, stirring occasionally until the greens are wilted and tender.
  5. Meanwhile, prepare the tofu by cutting it into cubes and coating them with tamari and cornstarch until well covered.
  6. In a different pan, heat the peanut oil over medium-high heat. Add the tofu cubes and fry for about 8-10 minutes, turning them regularly until they are golden and crispy on all sides.
  7. Once the greens are ready, mix in the lime juice and taste to adjust seasoning if necessary. Serve the sautéed greens topped with the crispy tofu for a delightful meal.
