Ingredients

- 1 ½ pounds of beef or chicken, cut into bite-sized chunks
- 2 tablespoons of olive oil
- 2 tablespoons of tamari or soy sauce
- 2 tablespoons of fresh lime juice
- 1 tablespoon of minced garlic

- 1 teaspoon of smoked paprika
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander

- 1 cup of cornmeal
- 4 cups of water
- 1 teaspoon of sea salt
- 1 tablespoon of unsalted butter or margarine
- 1 tablespoon of honey or maple syrup (optional)
Instructions
- In a large mixing bowl, whisk together olive oil, tamari, lime juice, garlic, ginger, smoked paprika, cumin, coriander, salt, and pepper.
- Add the meat chunks to the bowl and toss to ensure they are evenly coated.
- Cover the bowl and let it marinate in the refrigerator for a minimum of 1 hour, or preferably overnight.
- Heat your grill to a medium-high setting.
- Skewer the marinated meat onto the soaked wooden sticks, leaving space between each piece.
- Place the skewers on the grill and cook for approximately 10-15 minutes, turning them every few minutes.
- While the skewers are grilling, bring 4 cups of water to a rolling boil in a medium saucepan.
- In a separate bowl, combine the cornmeal with a cup of cold water to form a smooth slurry.
- Gradually pour the cornmeal mixture into the boiling water while whisking vigorously to avoid lumps.
- Lower the heat and continue stirring for about 10-15 minutes until the mixture thickens.
- Stir in the sea salt, butter, and honey or maple syrup (if using) until well blended.
- Plate the grilled skewers next to the creamy cornmeal delight and serve.
