Ingredients

  • 1 ½ pounds of beef or chicken, cut into bite-sized chunks
  • 2 tablespoons of olive oil
  • 2 tablespoons of tamari or soy sauce
  • 2 tablespoons of fresh lime juice
  • 1 tablespoon of minced garlic
  • 1 tablespoon of minced ginger
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • Salt and freshly cracked pepper to taste
  • Wooden skewers (pre-soaked in water for 30 minutes if using)
  • 1 cup of cornmeal
  • 4 cups of water
  • 1 teaspoon of sea salt
  • 1 tablespoon of unsalted butter or margarine
  • 1 tablespoon of honey or maple syrup (optional)

Instructions

  1. In a large mixing bowl, whisk together olive oil, tamari, lime juice, garlic, ginger, smoked paprika, cumin, coriander, salt, and pepper.
  2. Add the meat chunks to the bowl and toss to ensure they are evenly coated.
  3. Cover the bowl and let it marinate in the refrigerator for a minimum of 1 hour, or preferably overnight.
  4. Heat your grill to a medium-high setting.
  5. Skewer the marinated meat onto the soaked wooden sticks, leaving space between each piece.
  6. Place the skewers on the grill and cook for approximately 10-15 minutes, turning them every few minutes.
  7. While the skewers are grilling, bring 4 cups of water to a rolling boil in a medium saucepan.
  8. In a separate bowl, combine the cornmeal with a cup of cold water to form a smooth slurry.
  9. Gradually pour the cornmeal mixture into the boiling water while whisking vigorously to avoid lumps.
  10. Lower the heat and continue stirring for about 10-15 minutes until the mixture thickens.
  11. Stir in the sea salt, butter, and honey or maple syrup (if using) until well blended.
  12. Plate the grilled skewers next to the creamy cornmeal delight and serve.
