- 1/4 cup extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon freshly squeezed orange juice
- 1 teaspoon maple syrup
- Salt and freshly ground pepper to taste
Instructions
- Place the chopped kale in a large mixing bowl and massage it for about two minutes until tender and vibrant.
- Incorporate the cooked quinoa into the bowl, mixing well.
- Add the diced dates, almonds, red onion, and feta cheese if desired.
- In a separate small bowl, whisk together the olive oil, lemon juice, orange juice, maple syrup, salt, and pepper until smooth.
- Drizzle the dressing over the kale and quinoa mixture, gently tossing to coat evenly.
- Allow the salad to rest for at least 10 minutes to enhance the flavors.
- Serve the salad chilled or at room temperature.
