Kaak Date Delight is a delicious cookie made with dates and nuts, perfect for any occasion.

- 2 cups all-purpose flour
- 1/2 cup semolina
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 cup pitted dates, chopped
- 1/4 cup walnuts, chopped (optional)
- 1/4 cup sesame seeds (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the all-purpose flour, semolina, sugar, baking powder, salt, and ground cinnamon. Mix well.
- Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
- Stir in the milk and vanilla extract until a dough forms. If the dough is too sticky, add a little more flour as needed.
- Fold in the chopped dates and walnuts (if using) until evenly distributed throughout the dough.
- Divide the dough into 12 equal pieces and shape each piece into a round ball.
- Flatten each ball slightly and place them on the prepared baking sheet. Sprinkle sesame seeds on top of each cookie.
- Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a richer flavor, consider adding a teaspoon of orange or lemon zest to the dough.
- Substitute the walnuts with pecans or almonds for a different nutty flavor.
