Ingredients

  • 1 rack of lamb (about 1.5 to 2 pounds)
  • 2 tablespoons beef tallow (or olive oil)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the minced garlic, rosemary, thyme, Dijon mustard, salt, pepper, lemon juice, and lemon zest to create a herb paste.
  3. Pat the rack of lamb dry with paper towels. Rub the beef tallow all over the lamb, then spread the herb paste evenly over the meat.
  4. Place the rack of lamb, bone side down, in a roasting pan or on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes for medium-rare, or until the internal temperature reaches 135°F (57°C). Adjust cooking time for desired doneness.
  6. Remove the lamb from the oven and let it rest for 10 minutes before slicing into individual chops.

Notes

  • For added flavor, marinate the rack of lamb in the herb paste for a few hours or overnight in the refrigerator before roasting.
  • Serve with a side of roasted vegetables or a fresh salad to complement the rich flavors of the lamb.
