- 1 rack of lamb (about 1.5 to 2 pounds)
- 2 tablespoons beef tallow (or olive oil)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon lemon juice
- Zest of 1 lemon
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together the minced garlic, rosemary, thyme, Dijon mustard, salt, pepper, lemon juice, and lemon zest to create a herb paste.
- Pat the rack of lamb dry with paper towels. Rub the beef tallow all over the lamb, then spread the herb paste evenly over the meat.
- Place the rack of lamb, bone side down, in a roasting pan or on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes for medium-rare, or until the internal temperature reaches 135°F (57°C). Adjust cooking time for desired doneness.
- Remove the lamb from the oven and let it rest for 10 minutes before slicing into individual chops.
Notes
- For added flavor, marinate the rack of lamb in the herb paste for a few hours or overnight in the refrigerator before roasting.
- Serve with a side of roasted vegetables or a fresh salad to complement the rich flavors of the lamb.
