  • 2 teaspoons ground coriander

  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup plain yogurt
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 cup water

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until soft and translucent, about 5 minutes.
  3. Incorporate the minced garlic and cook for another minute.
  4. Add the lamb pieces and sear until browned on all sides, approximately 8-10 minutes.
  5. Sprinkle the cumin, coriander, cinnamon, paprika, salt, and black pepper over the lamb, stirring to coat.
  6. Add water to the pot and bring to a boil.
  7. Lower the heat to a gentle simmer, cover, and cook for 1.5 to 2 hours until the lamb is fork-tender.
  8. In a separate bowl, whisk together the yogurt and lemon juice until smooth.
  9. Slowly incorporate the yogurt mixture into the pot, stirring to blend.
  10. Return the pot to low heat and warm gently for about 5 minutes without boiling.
  11. Garnish with freshly chopped parsley and mint before serving.
