- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup plain yogurt
- 1/4 cup fresh lemon juice
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 cup water
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and sauté until soft and translucent, about 5 minutes.
- Incorporate the minced garlic and cook for another minute.
- Add the lamb pieces and sear until browned on all sides, approximately 8-10 minutes.
- Sprinkle the cumin, coriander, cinnamon, paprika, salt, and black pepper over the lamb, stirring to coat.
- Add water to the pot and bring to a boil.
- Lower the heat to a gentle simmer, cover, and cook for 1.5 to 2 hours until the lamb is fork-tender.
- In a separate bowl, whisk together the yogurt and lemon juice until smooth.
- Slowly incorporate the yogurt mixture into the pot, stirring to blend.
- Return the pot to low heat and warm gently for about 5 minutes without boiling.
- Garnish with freshly chopped parsley and mint before serving.
