  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1 tablespoon all-purpose flour (for tossing blueberries)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with non-stick spray.
  2. In a large mixing bowl, whisk together 2 cups of flour, 1 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt until well combined.
  3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
  5. In a small bowl, toss the blueberries with 1 tablespoon of flour to coat them. This helps prevent them from sinking in the batter.
  6. Gently fold the blueberries into the muffin batter.
  7. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  8. Sprinkle the tops of the muffins with coarse sugar for added crunch.
  9. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a lemon twist, add the zest of one lemon to the batter.
  • You can substitute half of the blueberries with raspberries or chopped strawberries for a mixed berry muffin.
