- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted and cooled
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
- 1 tablespoon all-purpose flour (for tossing blueberries)
- 1 tablespoon coarse sugar (for topping)
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with non-stick spray.
- In a large mixing bowl, whisk together 2 cups of flour, 1 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt until well combined.
- In another bowl, mix the melted butter, milk, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
- In a small bowl, toss the blueberries with 1 tablespoon of flour to coat them. This helps prevent them from sinking in the batter.
- Gently fold the blueberries into the muffin batter.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Sprinkle the tops of the muffins with coarse sugar for added crunch.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a lemon twist, add the zest of one lemon to the batter.
- You can substitute half of the blueberries with raspberries or chopped strawberries for a mixed berry muffin.
