Ingredients

- 3 cups popped popcorn (about 1/2 cup unpopped kernels)
- 1 cup mini marshmallows
- 1/4 cup unsalted butter
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 2 tablespoons furikake seasoning
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped nuts (optional)
Instructions
- In a large bowl, combine the popped popcorn and furikake seasoning. Set aside.
- In a medium saucepan over medium heat, melt the butter.
- Once melted, add the mini marshmallows, granulated sugar, and salt. Stir continuously until the mixture is smooth and the marshmallows are fully melted.
- Remove the saucepan from heat and stir in the vanilla extract.
- Pour the marshmallow mixture over the popcorn and furikake, mixing well to coat the popcorn evenly.
- If using, fold in the chopped nuts.
- Transfer the mixture to a greased 9×9-inch baking dish.
- Press down firmly with a spatula or your hands (damp hands work best) to create an even layer.
- Allow to cool for about 30 minutes before cutting into squares.
Notes
- For a sweeter treat, drizzle melted chocolate over the top before cutting into squares.
- To add a spicy kick, mix in some wasabi peas or crushed red pepper flakes with the popcorn.
