Description

A unique and delicious Japanese Black Sesame Mochi Cheesecake that combines the rich flavors of black sesame with a creamy cheesecake texture.


Ingredients

  • 1 ½ cups crushed graham crackers
  • ½ cup melted unsalted butter
  • 2 cups softened cream cheese
  • 1 cup sugar
  • 1 teaspoon vanilla essence
  • 3 large eggs
  • ½ cup whipping cream
  • ½ cup black sesame paste
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 325°F and prepare a 9-inch springform pan by greasing it and wrapping the exterior with aluminum foil.
  2. Mix the crushed graham crackers with the melted butter until well coated, then press this mixture into the bottom of the springform pan to form a crust. Bake for 10 minutes and let it cool completely.
  3. In a large bowl, whip the softened cream cheese until creamy and smooth. Gradually add the sugar and mix until fully blended. Add the vanilla essence.
  4. Add the eggs one at a time, mixing well after each addition. Scrape down the bowl as necessary.
  5. Gently fold in the whipping cream, black sesame paste, cornstarch, and lemon juice until smooth and combined.
  6. Pour the cheesecake filling over the cooled crust and tap the pan on the counter to remove air bubbles.
  7. Place the springform pan inside a larger baking dish and fill it with hot water halfway up the sides of the pan. Bake for 50-60 minutes until the edges are firm but the center has a slight wobble.
  8. After baking, turn off the oven and leave the door ajar for about an hour to cool gradually. Then let it reach room temperature before refrigerating for at least 4 hours or overnight.
  9. When ready to serve, release the sides of the springform pan, slice the cheesecake, and serve chilled.

Notes

  • For an extra crunch, sprinkle toasted black sesame seeds on top before serving.
  • You can substitute black sesame paste with tahini for a different flavor.
