Description
A unique and delicious Japanese Black Sesame Mochi Cheesecake that combines the rich flavors of black sesame with a creamy cheesecake texture.
Ingredients
Scale
- 1 ½ cups crushed graham crackers
- ½ cup melted unsalted butter
- 2 cups softened cream cheese
- 1 cup sugar
- 1 teaspoon vanilla essence
- 3 large eggs
- ½ cup whipping cream
- ½ cup black sesame paste
- 1 tablespoon cornstarch
- 1 tablespoon fresh lemon juice
Instructions
- Preheat your oven to 325°F and prepare a 9-inch springform pan by greasing it and wrapping the exterior with aluminum foil.
- Mix the crushed graham crackers with the melted butter until well coated, then press this mixture into the bottom of the springform pan to form a crust. Bake for 10 minutes and let it cool completely.
- In a large bowl, whip the softened cream cheese until creamy and smooth. Gradually add the sugar and mix until fully blended. Add the vanilla essence.
- Add the eggs one at a time, mixing well after each addition. Scrape down the bowl as necessary.
- Gently fold in the whipping cream, black sesame paste, cornstarch, and lemon juice until smooth and combined.
- Pour the cheesecake filling over the cooled crust and tap the pan on the counter to remove air bubbles.
- Place the springform pan inside a larger baking dish and fill it with hot water halfway up the sides of the pan. Bake for 50-60 minutes until the edges are firm but the center has a slight wobble.
- After baking, turn off the oven and leave the door ajar for about an hour to cool gradually. Then let it reach room temperature before refrigerating for at least 4 hours or overnight.
- When ready to serve, release the sides of the springform pan, slice the cheesecake, and serve chilled.
Notes
- For an extra crunch, sprinkle toasted black sesame seeds on top before serving.
- You can substitute black sesame paste with tahini for a different flavor.
