Ingredients

  • 1 cup salted cod, soaked overnight and rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 sweet bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground allspice
  • 1 cup diced ripe mango
  • 1 cup diced fresh pineapple
  • 1 cup diced papaya
  • 1/4 cup sliced green onions
  • 1/4 cup freshly squeezed lime juice
  • Salt, to taste

Instructions

  1. Place the soaked cod in a saucepan and cover it with fresh water. Bring to a boil, then lower the heat and simmer for approximately 15 minutes, or until tender.
  2. Drain the fish and allow it to cool before flaking it into small pieces, removing any bones.
  3. In a large frying pan, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until tender.
  4. Incorporate the minced garlic, thyme, black pepper, and allspice into the pan, cooking for an additional 2 minutes until aromatic.
  5. Add the flaked cod to the pan, stirring thoroughly to combine. Cook for another 5 minutes, stirring occasionally.
  6. Carefully fold in the diced mango, pineapple, and papaya, cooking for an additional 2-3 minutes until warmed through.
  7. Remove from heat and mix in the sliced green onions and lime juice. Adjust salt as needed.
  8. Serve warm as a main course or delightful side.
