- 1 cup salted cod, soaked overnight and rinsed
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 sweet bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon ground allspice
- 1 cup diced ripe mango
- 1 cup diced fresh pineapple
- 1 cup diced papaya
- 1/4 cup sliced green onions
- 1/4 cup freshly squeezed lime juice
- Salt, to taste
Instructions
- Place the soaked cod in a saucepan and cover it with fresh water. Bring to a boil, then lower the heat and simmer for approximately 15 minutes, or until tender.
- Drain the fish and allow it to cool before flaking it into small pieces, removing any bones.
- In a large frying pan, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until tender.
- Incorporate the minced garlic, thyme, black pepper, and allspice into the pan, cooking for an additional 2 minutes until aromatic.
- Add the flaked cod to the pan, stirring thoroughly to combine. Cook for another 5 minutes, stirring occasionally.
- Carefully fold in the diced mango, pineapple, and papaya, cooking for an additional 2-3 minutes until warmed through.
- Remove from heat and mix in the sliced green onions and lime juice. Adjust salt as needed.
- Serve warm as a main course or delightful side.
