Delicious and cheesy jalapeño popper chicken enchiladas that are sure to impress!

- 2 cups shredded rotisserie chicken
- 1 cup softened cream cheese
- 1 cup grated sharp cheddar cheese
- 1 cup grated pepper jack cheese
- 1/2 cup chopped fresh or pickled jalapeños
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 8 small flour tortillas
- 1 cup enchilada sauce
- 1/4 cup fresh cilantro, chopped (for garnish)
- Sour cream, for serving
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the shredded chicken, cream cheese, sharp cheddar, pepper jack, jalapeños, garlic powder, onion powder, cumin, smoked paprika, salt, and black pepper until thoroughly blended.
- Lightly coat the bottom of a 9×13 inch baking dish with a layer of enchilada sauce.
- Take a tortilla, place about 1/4 cup of the chicken mixture in the center, and roll it up tightly, placing it seam-side down in the dish.
- Continue this process until all tortillas are filled and arranged in the dish.
- Pour the remaining enchilada sauce over the top, ensuring all tortillas are covered.
- Sprinkle any leftover cheese on top for an extra cheesy finish.
- Cover the dish with aluminum foil and bake for 20 minutes.
- Remove the foil and continue baking for another 10-15 minutes or until the cheese is melted and slightly golden.
- Allow to cool for a few minutes before garnishing with fresh cilantro.
- Serve warm with a dollop of sour cream on the side.
Notes
- For a spicier version, use more jalapeños or add some diced green chilies.
- These enchiladas can be made ahead of time and stored in the refrigerator before baking.
